Aphelion The Emergent Mourvèdre 2020

Aphelion The Emergent is a varietal Mourvèdre, rarely bottled alone in Australia.

Mourvèdre, known here for years as Mataro, arrived with the earliest plantings and was mostly used for blending and fortified wine. On its own it gives a firm, dark, savoury red that needs heat to ripen fully, which McLaren Vale provides. Aphelion sources from old dry-grown vines, ferments with native yeast and whole bunches, and matures in seasoned oak.

Decant and serve at 17 degrees with braised beef, game or hard cheese. It develops over a decade.
