Arnaud Lambert Saumur blanc Les Perrières is a dry Chenin Blanc from a shallow limestone parcel at Saint-Cyr-en-Bourg, in magnum.

Les Perrieres is a parcel at Saint Cyr en Bourg, south of Saumur, where the Turonian tuffeau limestone comes close to the surface beneath a thin cover of clay and flint; the name refers to the old stone quarries cut into the same rock. Arnaud Lambert farms here organically alongside the vineyards of the Chateau de Breze, working the soils and picking by hand. The Chenin Blanc is whole bunch pressed, fermented with indigenous yeast and raised on its fine lees in seasoned barrel and larger wood with no new oak, then bottled dry. The style is taut and chalky, carrying the firm acidity that shallow limestone brings.

Dry, saline and precise, it suits oysters, grilled fish, charcuterie and goat cheese; serve at 11 to 12 degrees.
