Arnaud Lambert Saumur Brézé blanc David 2021

Arnaud Lambert Saumur Brézé blanc David is a dry Chenin Blanc from one of the historic walled clos on the Brézé hill.

David is one of the walled clos on the hill of Brézé, south of Saumur, farmed by Arnaud Lambert as part of the Château de Brézé estate that he took on and converted to certified organic viticulture. The hill is a mound of Turonian tuffeau limestone, in places with a clay and flint cap, and each clos behaves slightly differently according to its depth of soil and its exposure. Fruit is picked by hand, whole bunch pressed, fermented with indigenous yeast and raised for an extended period on fine lees in seasoned barrel and larger wood. The wine is bottled dry and is built for long ageing.

Dry, deep and firmly structured, it suits turbot, veal, roast poultry and mature hard cheese; serve at 12 degrees and decant when young.
