Description
Arnaud Lambert Saumur Brézé Clos de l'Étoile is the domaine's top red from the walled vineyards of the Brézé hill.
Brézé is a limestone eminence south of Saumur whose clos were mapped and prized long before the modern appellation system, and Arnaud Lambert has spent years restoring them. Clos de l'Étoile is among the finest, a small enclosure where a thin skin of clay covers solid tuffeau, forcing the Cabernet Franc roots deep and holding yields very low. The vineyard is farmed organically and picked by hand. Fermentation is with indigenous yeast and extraction is done by infusion, then the wine spends an extended elevage in large seasoned wood before being bottled unfiltered in small quantity.
Concentrated but chalky and fine, built for the cellar; serve with roast lamb, beef or game, decanted, at around 17 degrees.
