Arnaud Lambert Saumur-Champigny Clos Moleton 2019

Arnaud Lambert Saumur-Champigny Clos Moleton is a walled single-vineyard Cabernet Franc and one of the domaine's most serious reds.

Clos Moleton is an enclosed parcel in Saumur-Champigny where a very shallow layer of clay sits directly on tuffeau limestone, the sort of site that keeps yields low and gives Cabernet Franc a chalky, tightly drawn structure. Arnaud Lambert farms it organically, ploughing between the rows and picking by hand at full ripeness. The fruit is fermented with indigenous yeast and extracted gently by infusion rather than hard pumping over, then given a long elevage in large older wood so that the tannin resolves without oak flavour. The wine is bottled unfiltered and repays time in the cellar.

Dense but finely framed, it belongs with roast lamb, beef, game and mature cheese; decant and serve at around 17 degrees.
