Arnaud Lambert Saumur Saint-Cyr-en-Bourg Les Perrières 2021

Arnaud Lambert Saumur Saint-Cyr-en-Bourg Les Perrières is a dry Chenin Blanc grown on thin soil over the fractured limestone plateau around the domaine's home village.

Saint-Cyr-en-Bourg lies on the tuffeau plateau of Saumur, honeycombed with the quarries and cellars cut into the rock over centuries, and the name Les Perrières points to exactly that stone-working past. Arnaud Lambert farms from the village, home of his family's Domaine de Saint-Just, and also works the historic vineyards of the Château de Brézé. Chenin Blanc grown on shallow soil over cool, fractured limestone ripens slowly and holds its acidity, giving dry wines with tension rather than weight. The fruit is pressed in whole bunches, fermented with the vineyard's own yeasts and matured on lees in seasoned barrels, a restrained élevage that adds texture without pushing wood flavour into the wine. The vineyards are farmed organically.

Dry, taut and better for a year or two more in bottle, it suits scallops, roast chicken and washed-rind cheese; serve at around 11 degrees.
