Ashes & Diamonds Napa Valley Blanc No.4 2018

Ashes & Diamonds Napa Valley Blanc No.4 is an equal blend of Semillon and Sauvignon Blanc from southern Napa.

The model is white Bordeaux, the wines of Domaine de Chevalier specifically, and the Semillon comes from remarkable ground: Kendall Hoxsey's Yount Mill Vineyard in Yountville, planted in 1962 and the oldest Semillon in California, head-trained, dry-grown and barely cropping. Steve Matthiasson blends mature-vine Sauvignon Blanc from the estate vineyard in Oak Knoll alongside it. Both sites catch cool fog in the morning and a breeze off San Pablo Bay in the afternoon, which is what keeps the acid intact this far south. The parcels co-ferment naturally in barrel and rest ten months on fine lees in French oak, a quarter of it new, with no stirring.

Three years in bottle before release has settled the Sauvignon's pungency and let Semillon's key lime and lemongrass take over. Citrus and blossom sit against honey and toasty spice, with fine texture woven through. Serve at 10 to 12 degrees with grilled snapper, scallops, or a soft goat's cheese.
