Ashton Hills Reserve Pinot Noir 2025

Ashton Hills Reserve Pinot Noir is the flagship red of this tiny Piccadilly Valley estate, made in small quantities for the cellar.

High on the Mount Lofty ridge, the three-hectare vineyard is among the coolest and wettest in South Australia, and has been planted to Pinot Noir since 1982. The Reserve is a selection of the best fruit from the estate's preferred clones, traditionally led by D5V12, which founder Stephen George singled out after years of trial plantings. Winemaker Liam Van Pelt ferments it with wild yeast in small open vessels, includes some whole bunches, and matures it in French oak barriques with a higher share of new wood than its Estate sibling. The result is darker, denser and more firmly structured, with earthy spice and a tight line of acidity.

Decant for half an hour if opening young, and pour at around 15 to 17 degrees. Good partners include roast pork belly, venison, duck with beetroot or aged hard cheese. It is built to develop over ten years or more in good cellaring conditions.
