Description
A Proibida em Rosé is a taut, pale pink pressed from Isabella and other old-vine fruit that has grown on Pico for two hundred years.
Isabella reached the islands from North America and is now barred from commercial wine across the European Union, blamed for bringing phylloxera to Europe. Old plots of it stayed put on Pico regardless, sheltered inside the currais, the low lava-rock corrals built to keep the wind off. Bunches are sorted on a table, crushed gently and moved without pumps; the must takes three to six hours of skin contact at low temperature before fermenting spontaneously at 12°C.
Crushed strawberry and cream on the nose, then grapefruit pith and a firm saline edge with real texture behind it. Pour it at 10–12°C alongside sashimi, green papaya salad or sardines off the grill.
