Description
Rosé Vulcânico is a pale, saline Atlantic rosé drawn from red grapes rooted in the black basalt of Pico Island.
Pico lies roughly 1,500 kilometres out in the Atlantic, and these bush-trained plots sit almost at the waterline, each walled square holding only two to six vines. Picking happens by hand into 40 kilogram baskets, with heavy sorting before anything reaches the press. There is no maceration at all: free-run juice goes straight into small stainless tanks and ferments on wild yeast.
Wild strawberry and blood orange lead, then iodine and oyster shell, with a long mineral finish. Chill it to 8–10°C and pour with grilled prawns, salt-cod fritters or fresh oysters.
