Description
Babo Chianti is a juicy, carbonic-influenced Tuscan red, and as far as its makers know the first Chianti bottled under screwcap in a Burgundy-shaped bottle.
Chianti DOCG covers a broad sweep of Tuscany beyond the Classico zone, and quality varies widely across it. The fruit for this wine comes from a single south-west-facing vineyard at Vinci, near Empoli, west of Florence. Winemaking takes two paths: one parcel ferments as whole bunches, fully carbonic, and is raised in concrete vats for six months, while a second is de-stemmed and matured in concrete for eight months. Blending the two keeps Chianti's sour-cherry tang and fine acidity while adding lift and a lighter, more open texture. There is no oak, and the concrete raising keeps the wine fresh and unmarked.
Drink now and over the next three years. Serve slightly cool, at 15-16°C, with pizza, salumi or a tomato-based pasta.
