Description

Babo Pinot Grigio is sourced not from the Veneto but from a thirty-year-old vineyard in Friuli, and given a short spell of skin contact in the press.

Friuli, in Italy's far north-east, has a long-standing reputation for the country's best white wines, built largely on the swing between warm days and cold nights that lets fruit ripen slowly while aromatics build. The fruit here comes from San Martino al Tagliamento, near Pordenone, where the vineyard sits at the base of the Alps on a mix of clay and alpine gravel left by alluvial deposits. Pinot Gris from Friuli tends to carry more flesh than examples from the Veneto or Trentino, and Justin Bubb pushes that further by leaving the crushed, de-stemmed fruit to sit in the press for about twenty-four hours before pressing begins. Fermentation followed in steel tank, and the wine rested on lees for twenty weeks before bottling.

Best drunk within two or three years of the vintage. Serve at 10-12°C with prosciutto, pan-fried fish or a bowl of risotto primavera.
