Description

Babo Pinot Grigio is a Friulian white given several hours of skin contact before pressing.

Friuli, in Italy's far north-east, has a long-standing claim to the country's finest white wines, and the reason is largely climatic: warm growing-season days give way to very cold nights, stretching ripening out and preserving aromatic detail. Babo is the label of winemaker Justin Bubb, who draws this Pinot Gris from a thirty-year-old site at San Martino al Tagliamento, near Pordenone. The vineyard sits at the base of the Alps on a mix of clay and alpine gravel laid down by alluvial deposits. Friulian Pinot Grigio tends to carry more flesh and layering than the versions grown in Veneto or Trentino, and Bubb pushes that character further: the fruit is de-stemmed and crushed, then left in the press for about twenty-four hours, some eight of them in contact with the skins, before pressing begins. Fermentation follows in stainless steel and the wine rests eight months on lees.

Drink over the next two to three years; serve at 10-12°C with prosciutto, grilled prawns or pasta with butter and sage.
