Description
Babo Pinot Grigio is a skin-contact Pinot Grigio from Friuli in north-east Italy.
Friuli's reputation for Italy's best whites rests on its diurnal range: warm days and freezing nights through the growing season, which stretches ripening out and holds the aromatics together. The fruit here comes from two sites at San Martino al Tagliamento near Pordenone, vines over thirty years old at the foot of the Alps, on clay mixed with alpine gravel from alluvial deposits and cropped at nine tonnes to the hectare. Justin Bubb gives the fruit six hours of skin contact, crushing it to press and letting it soak there before the juice is pressed out and allowed to settle. Friulian Grigio carries more flesh than the Veneto or Trentino versions, and the skins underline it.
Pear, white peach and a faint copper-tinged spice, with bright acidity, real weight and a textural, gently grippy close. Serve at 9 to 11 degrees. It suits prosciutto and figs, spaghetti alle vongole, grilled calamari, or a frittata with herbs.
