Description
Babo Prosecco Rosé is a Charmat-method sparkling from Friuli, 89 per cent Glera with Pinot Noir for colour.
Prosecco Rosé was only formally admitted to the DOC in 2020, and the rules require Pinot Noir alongside Glera, a vintage date on the label and a longer period on lees than white Prosecco. This wine comes from vineyards on the alluvial soils around San Martino al Tagliamento, near Pordenone in Friuli, where Justin Bubb makes the Babo range. The blend is 89 per cent Glera and 11 per cent Pinot Noir, given its second fermentation in tank by the Charmat method traditional to the region and left on lees to build texture. The result is bright and perfumed, with summer-berry weight, a soft and fleshy middle and a cranberry-edged finish, rather than the sweetness common in the category.
Drink it young and well chilled at about 8°C, as an aperitif or with charcuterie, prawns or anything off a summer barbecue.
