Babo Rosato 2020

Babo Rosato is a pale, dry Tuscan rosato made entirely from Sangiovese grown near Vinci.

Tuscany is not primarily a rosé region, but Sangiovese lends itself well to the style: it has the acidity to stay fresh and enough savoury character to avoid the confected fruit that dogs a lot of pink wine. Babo is the youngest label in the family of wines of that name, and the fruit here comes from a vineyard near Vinci on the western flank of the Chianti zone. The soils are alberese, the compact clay and limestone that Tuscan growers associate with structure and freshness. Skin contact was kept to between two and four hours only, which accounts for the very pale colour, and the wine was then fermented and raised for six months in concrete tank. There is no oak and no attempt at richness.

Drink young, ideally within a year or two of the vintage. Serve at 10-12°C with grilled vegetables, seafood salad or a summer charcuterie board.
