Description
Babo's Soave is the youngest wine in the range, made from Garganega grown on volcanic soils in the Veneto.
Soave has spent two decades recovering from the reputation it earned in the bulk-wine years, and the appellation's volcanic and limestone hills east of Verona are now taken seriously again. Babo is a recent arrival to the category. The wine is crafted from Garganega with a small parcel of Trebbiano di Soave, and after a gentle press and a short maceration on skins to build texture and complexity, Justin Bubb ferments the juice in stainless steel and matures the wine on light lees for five months. That regime gives a white with the almond and waxy character typical of Garganega and a saline, textured mouthfeel, without any oak. It is a smart first release, and like the rest of the Babo range it is made to be lively, versatile and easy to put on a table for a crowd.
Drink over the next two to three years. Serve at 10-12°C as an aperitif, with a shellfish pasta, or with roast asparagus and plenty of Parmesan.
