Description
Babo Soave is a Veneto white built mainly on Garganega, with a small parcel of Trebbiano di Soave for detail.
Soave is Garganega country, and the best of it grows on the volcanic soils east of Verona, where the variety gives whites of citrus, orchard fruit and a distinctive saline, waxy edge rather than obvious weight. Babo is a negociant-style project working with growers and a light touch in the cellar. This wine is drawn from volcanic sites at elevations between 40 and 120 metres. The fruit is gently pressed and given a short maceration on skins to build texture and complexity, then fermented in stainless steel tanks and held six months on light lees before bottling. There is no oak. The style is deliberately bright and unforced, made for volume drinking rather than cellaring, and it sits in the broad revival of quality Soave that has gathered pace over the past decade after the appellation's long period in the doldrums.
Drink now and over the next two years; serve at 10-12°C as an aperitif, or with shellfish pasta or roasted asparagus and Parmesan.
