Balthasar Ress Von Unserm Rheingau Pinot Noir Trocken is a dry, lighter-framed German Pinot Noir from an organic estate better known for Riesling.
Pinot Noir, or Spätburgunder, makes up only a small share of the vineyards at this Hattenheim winery, which has been in the same family since 1870. 'Von unserm' means 'from ours' and marks the estate-level wines in the VDP classification. According to the producer, the grapes are picked by hand and given a cold soak before a spontaneous fermentation of about three weeks in stainless steel. The wine then goes through malolactic conversion and matures for around 15 months, with a third of it in used oak barrels, before being bottled unfiltered. The estate's vineyards are certified organic.
A light chill does this wine good, so aim for 14 to 16 degrees. Pour it with roast chicken, mushroom dishes, charcuterie or seared tuna. Because it is unfiltered, a slight haze or fine sediment is normal.
