Balthasar Ress Von Unserm Riesling Trocken is the estate's everyday dry Riesling, blended from vineyards across the Rheingau.

Christian Ress is the fifth generation to lead this Hattenheim estate, a VDP member whose holdings stretch along the Rhine from Erbach to Rüdesheim. This wine sits at the Gutswein, or estate, level of the VDP's four-tier classification. The producer notes that the grapes are selected by hand from a number of sites, fermented cool in stainless steel tanks, then left on the lees for about three months before the final blend is put together. No oak is used, which keeps the focus on fresh fruit and the firm acidity typical of the region. The wine is certified organic and comes in at around 12% alcohol.

Pour it straight from the fridge. Salads, goat's cheese, steamed dumplings, grilled whiting and mildly spiced Asian dishes all work well. Drink it young for its freshness.
