Bannockburn Cabernet Sauvignon/Merlot Museum 2015

Bannockburn Cabernet Sauvignon/Merlot Museum is a cellared Geelong Cabernet blend released with a decade of bottle age.

Each year the Hooper family holds back a portion of the vintage for extended cellaring and releases it when they judge it ready. That is the whole idea behind the museum program, and it is a generous one. The fruit comes from some of the oldest plantings on the property: Cabernet Sauvignon from 1976 and 1981, Merlot from 1981 and Shiraz from 1996, all rooted in dark, volcanic loam over a limestone base. Hand-picked and destemmed with a small whole-cluster portion, the wine saw a long maceration before twelve months in seasoned French barrels of various sizes. Aged Cabernet from this estate tends to keep its structure and freshness.

Savoury and spicy with brambly fruit, baking spice and an iron-filing edge. The tannins are still lasting and the acid fresh, holding the early signs of maturity in balance through a long close. Decant, serve at 17 degrees, and pair it with roast lamb or a rib of beef.
