Bannockburn Chardonnay Museum Release 1.5L MAGNUM 2017

Bannockburn Chardonnay Museum Release 1.5L MAGNUM is a cellared magnum of the estate's Geelong Chardonnay.

Held back by the estate and released when the team judged it ready, this comes from Olive Tree Hill, planted in 1976, and the Winery Block from 1981, on volcanic soils over limestone with vines averaging around thirty-five years. Whole bunches were pressed and settled overnight, then wild-fermented in 500-litre French oak puncheons with a fifth new. Twelve months on lees followed, stirred only minimally, with no sulphur added until a small addition just before bottling in March 2018. Magnum format and museum release together mean this has developed about as slowly as a wine of its kind can.

Mature now, with lemon curd, roasted nuts and toast over the stony, saline core, and acid that has held its line. Serve at 12 degrees, in big glasses, with air. It wants roast chicken and lemon, a whole baked fish, or a cheese course at the end of a long lunch.
