Bannockburn Pinot Noir in 1.5-litre magnum is the estate’s Geelong Pinot Noir blend, bottled in a format built for the cellar.
Magnums age more slowly than bottles, which suits a wine like this. Under Matt Holmes the estate’s Pinot has grown less extravagant than it once was, with more purity and balance, helped along by organic viticulture, a measured use of whole bunches and earlier bottling. The 2021 drew on the full spread of estate plantings from 1976, 1997 and 2007, close-planted blocks included, all on volcanic loam and dark clay over limestone. Most of the fruit was destemmed and fermented on indigenous yeast with 20 per cent whole bunches, then spent ten months mainly in Tronçais hogsheads, a quarter new. Under screwcap.
Red cherry and rhubarb with the estate’s earthy savour behind, tannin fine and acidity brisk. Serve at 15 degrees; from magnum it will take a decade in a good cellar. Roast duck, mushroom pasta, or charcuterie.
