Bannockburn S.R.H. Chardonnay 2025

Bannockburn S.R.H. Chardonnay is the estate's top white, named for founder Stuart R. Hooper.

Geelong's Moorabool Valley gives this Chardonnay its tension, and the winemaking is deliberately old-world: handpicked parcels are whole-bunch pressed, settled overnight and racked to French oak hogsheads and puncheons, roughly forty per cent new, for a wild-yeast fermentation. About seventy per cent of the blend goes through malolactic, and the wine rests on lees largely unstirred.

Serve at 12 degrees with roast chicken, scallops, crab or a well-aged hard cheese.
