Description
Bannockburn Sauvignon Blanc is a textural, barrel-influenced Sauvignon Blanc from Geelong.
Most of the fruit came from 1996 plantings along the eastern edge of the Winery Block in 2018, with a little from newer vines on Olive Tree Hill. Matt Holmes split the crop: a third was destemmed and lightly crushed, then fermented on skins for a week and finished in older puncheons, while the remainder went to tank as whole-bunch pressed juice. His versions of this wine sit lighter on their feet than the deep-set, heavily worked examples his predecessors made, without giving up the texture and savour that made the label unusual in the first place.
Not a herbaceous style: think quince, pear skin, a little lanolin, and a chewy, phenolic finish. Serve at 10 to 12 degrees. Pork with fennel, roast chicken, or a bowl of clams and white beans.
