Bannockburn Sauvignon Blanc 2021

Bannockburn Sauvignon Blanc is a dry, savoury Sauvignon Blanc from old vines in the Moorabool Valley.

From this vintage the cellar work was pulled right back, so the old vines and limestone soils do more of the talking than barrel or lees ever did. Where 2019 leaned on skin contact, barrel fermentation and extended lees, here a portion of the fruit was crushed and left briefly on skins before pressing, with the remainder whole-bunch pressed straight to tank; the wine was then racked clear of lees into seasoned French barrels for nine months. The vines went in during 1996 at the eastern edge of the property, beside the Serré Pinot Noir rows, inside the certified organic block.

Fresh and zingy with a phenolic chew and chalky drive, savoury more than tropical, closer in spirit to Saint-Bris than Marlborough. Serve at 10 to 12 degrees. Grilled fish, goat’s cheese, or asparagus with hollandaise.
