Bannockburn Sauvignon Blanc 2022

Bannockburn Sauvignon Blanc is a barrel-aged Sauvignon Blanc from certified organic vines in Geelong.

Limestone is the point here. The vines went in during 1996 at the eastern edge of the property, on a block beside the Serré Pinot Noir rows, with a second small parcel on the east side of the dam; both fall inside the certified organic section. Fruit from those old, limestone-rooted vines was pressed as whole bunches and settled overnight before racking to tank for fermentation, then moved without lees to seasoned French barrels for eight months. Matt Holmes has spent several vintages trimming the winemaking back so the site reads more clearly.

Dry and quietly complex, with pear, citrus peel, wet stone, and a firm chalky finish. Serve at 10 to 12 degrees. Try it with grilled snapper, roast pork, or a goat’s cheese and thyme tart.
