Description
Bannockburn Sauvignon Blanc is a savoury Sauvignon Blanc from two small organic parcels in Geelong.
Two parcels, both planted in 1996 and both certified organic, sit at the eastern edge of the property on the block adjoining the Serré Pinot Noir vines. The winemaking is now close to transparent: bunches pressed whole, settled overnight, racked to tank to ferment, then three months on lees in stainless steel before bottling. That is a long way from the deep-set, heavily worked examples the estate made twenty years ago, and the trade is a clear gain in tension and definition. The limestone underneath does the rest of the work.
Full-flavoured yet crisply drawn, with citrus, blackcurrant leaf and a stony edge, texture through the middle and real drive on the finish. Serve at 10 to 12 degrees. Oysters, grilled prawns, or a goat’s cheese salad.
