Description

Belsazar Dry is a German vermouth built on Baden wine and fortified with a touch of Black Forest peach eau-de-vie.

Belsazar is made in the Black Forest in south-west Germany, drawing on a region better known for fruit distilling than for aperitifs. The base wine is Gutedel, the grape called Chasselas in France and Switzerland and widely planted along the upper Rhine in Baden. The dry expression uses two types of wormwood in a botanical bill that also takes in apple, cinchona, fennel, cardamom and lemon peel, and is fortified with peach eau-de-vie from the Schladerer distillery. Residual sugar sits at 28 grams per litre, below Noilly Prat and Dolin, which makes it genuinely dry while keeping more vinous texture than most of the category. That combination makes it as useful in the kitchen, in a beurre blanc, a vinaigrette or a risotto, as it is behind the bar.

Serve chilled over ice with tonic and a twist of lemon, or stirred into a Martini at around 25ml to 50ml of gin. It also sits well with olives, salted almonds and charcuterie.
