Bernabeleva Camino de Navaherreros Blanco is a biodynamically farmed Sierra de Gredos white built on the estate's old-vine Albillo.
Bernabeleva is one of the estates that returned the granite highlands of San Martín de Valdeiglesias, in the western reach of D.O. Vinos de Madrid, to serious attention, and its vineyards are farmed biodynamically. Alongside the reds it has gained a reputation for whites based on the enigmatic Albillo grape: sumptuously textured, earthy and pure, often slow to unfurl in the glass, and entirely out of step with the prevailing appetite for instant gratification. This bottling draws heavily on the estate's old-vine Albillo, blended with its younger field-blend plantings of Macabeo, Grenache Blanc, Malvar and Moscatel. The grapes were harvested by hand and pressed softly into a combination of used oak barrels, large oak vats and stainless steel, where fermentation began spontaneously with wild yeast. Part of the wine went through malolactic fermentation and part did not.
Give it air and a large glass; it will keep developing over several years. Serve at 11-12°C with roast chicken, grilled vegetables or a firm sheep's cheese.
