Description
Bernard Defaix Montée de Tonnerre is a Chablis premier cru from old vines in Chapelot, the sector closest in character to the grand crus.
Montée de Tonnerre lies on the right bank of the Serein, immediately alongside the grand cru hill, and Chapelot forms 20 hectares of it on a similar southeast-facing aspect. Raveneau is the vineyard's most famous grower, with Moreau-Naudet, Billaud-Simon and others also holding vines in the lieu-dit. Didier Defaix has worked with the same grower family here for twenty years; the vines are not certified organic, but he reports the grower farms as the domaine does. The cuvée is fermented with wild yeasts entirely in used barrels of one to five years, with regular bâtonnage, and bottled after 12 months. The barrel work builds texture while the site keeps the wine tight and stony.
Approachable now and better still from three years, holding a decade. Serve at 10-12°C with oysters, roast chicken or a gratin of white fish.
