Bernard Defaix Chablis 1er Cru Montée de Tonnerre 2022

Bernard Defaix Chablis 1er Cru Montée de Tonnerre is drawn from old vines in Chapelot, the lieu-dit that sits alongside the grand crus.

Montée de Tonnerre is generally rated the finest of the Chablis premiers crus, lying on the right bank of the Serein immediately beside the grand cru slope. Chapelot, which makes up around 20 hectares of it, shares a similar southeast-facing aspect to its grand cru neighbours, and its most famous grower is Raveneau, with Moreau-Naudet and Billaud-Simon also holding vines there. Unlike the domaine's Côte de Léchet, Defaix's Montée de Tonnerre is made from purchased fruit, bought for two decades from the same grower whose farming Didier Defaix regards as equivalent to his own, though the vineyard is not certified organic. The wine ferments with native yeasts entirely in used barrels of one to five years, with regular bâtonnage, and is bottled after 12 months under Diam closure.

It will drink well for the next decade, and pairs with oysters, roast chicken or a creamy fish pie. Serve at 10 to 12 degrees.
