Bernard Defaix Chablis 1er Cru Montmains 2023

Bernard Defaix Chablis 1er Cru Montmains is the domaine's first bottling from this premier cru, made from a single parcel of 35-year-old vines.

Montmains lies on the left bank of the Serein, on the opposite flank of the Valvan valley to Les Vaillons. Its soil is deep bleu d'argile, a blue clay still well supplied with limestone, and the climat is routinely cited as a source of textbook Chablis built on tension rather than weight. Domaine Bernard Defaix works from Milly, at the foot of the Côte de Léchet, and has farmed there across three generations. The fruit for this wine comes from the eponymous section of Montmains itself, a cool site close to the river that holds acidity well and gives the wine its firm mineral spine. Fermentation is followed by twelve months in old oak barrels, so the barrel work adds texture without flavour. The wine is sealed with a Diam closure.

Approachable on release and worth cellaring for five to eight years. Serve at 10-12°C with grilled flathead, roast chicken or a plate of Sydney rock oysters.
