Bernard Defaix Chablis Grand Cru Bougros 2023

Bernard Defaix Chablis Grand Cru Bougros comes from the top of the steepest vineyard on the Chablis grand cru slope.

Bougros occupies the north-west corner of the grand cru hillside, below Preuses, with a south-easterly exposure and the steepest gradient of the seven climats. Its Kimmeridgian marl gives a broader, rounder style than its neighbours, which Jasper Morris has likened to being smothered in a great big woolly jumper, though the upper sector, from which this wine is drawn, shows the classical mineral cut of Chablis alongside that weight. Domaine Bernard Defaix is based at Milly and is better known for its holdings in Côte de Léchet, making this a comparatively rare bottling. The wine ferments and ages in oak barrels with regular bâtonnage and is bottled after 18 months, so it carries more texture and breadth than the domaine's premiers crus. Closure is Diam.

Worth cellaring for five to fifteen years, it suits lobster, roast chicken or a rich fish dish in cream. Serve at 11 to 12 degrees.
