Description
Bernard Métrat Chiroubles Constance is a single-parcel Gamay from sixty-year-old vines at four hundred metres in the highest of the Beaujolais crus.
Chiroubles is the smallest and highest of the ten crus, a natural amphitheatre of granite sand sitting between roughly 250 and 450 metres, and altitude is the defining factor: harvest comes late, acidity stays high and the wines are among the most delicate and floral in Beaujolais. Constance comes from sixty-year-old vines on an east-facing slope at four hundred metres, so morning sun and cool afternoons. Old vines on this thin, free-draining granitic sand give small berries and low yields. Fruit is picked by hand as whole bunches and fermented in the semi-carbonic Beaujolais way, then aged briefly before bottling under stelvin, which keeps the wine tight and reductive in its youth.
Perfumed and light-framed with fine tannins, it suits charcuterie, roast chicken, salmon and goat cheese; serve lightly chilled at 13 to 14 degrees.
