Description
Bernard Métrat Chiroubles La Scandaleuse comes from south-facing vines of sixty to more than eighty years old, low on the slope of the highest Beaujolais cru.
Chiroubles is granite country, a high bowl of weathered pink granite whose sandy topsoil drains hard and keeps vine vigour low. This parcel lies low on the slope and faces full south, the warmer end of a naturally cool cru: deeper soil at the base of the hill and maximum sun exposure give a rounder, riper reading of Gamay than the estate's higher-altitude bottling. Vine age of sixty to over eighty years brings small crops and depth of flavour. Picking is by hand in whole bunches, fermentation is semi-carbonic with indigenous yeasts, and élevage is short, with bottling under stelvin to hold the wine's freshness.
Rounder and riper than a typical Chiroubles but still fine-boned, it works with roast pork, duck, mushroom dishes and charcuterie; serve at 14 to 15 degrees.
