Bessin-Tremblay Chablis 1er Cru Fourchaume 2022

Bessin-Tremblay Chablis 1er Cru Fourchaume is blended from three old-vine parcels spread over the full height of the hillside.

Fourchaume is the largest of the right-bank premier crus of Chablis, sitting on the same Kimmeridgian marl and limestone as the grand crus a little to the south. This cuvée draws on 1.15 hectares of old vines in the heart of the climat plus a smaller portion in L’Homme Mort at the northern end, and the three parcels differ in aspect, vine age and rootstock. The domaine’s holdings run the whole height of the slope, from roughly 130 to 200 metres, practically up to the forest that caps the hill. Most of the vines were planted between 1959 and 1971 and they reliably give one of the most opulent and layered wines in the cellar. This release was raised with 30 per cent old oak, which builds texture without adding obvious wood character.

Fleshy and persistent, and good from release out to about eight years. Serve at 10-12°C with oysters, seared scallops or a chicken and tarragon fricassée.
