Bessin Tremblay Chablis Vieilles Vignes is a village Chablis drawn from six parcels of the domaine's oldest vines at La Chapelle-Vaupelteigne.
Chablis lies well north of the Côte d'Or, and its Kimmeridgian marl, a seam of clay and limestone packed with fossilised oyster shell, is the reason the wines taste as they do. Bessin Tremblay farms at La Chapelle-Vaupelteigne, and this cuvée comes from around three hectares on the steep slopes facing the Fourchaume premier cru. Six parcels of villages-level vines are blended, all planted between 1950 and 1974, sitting across both Kimmeridgian marl and the shallower Portlandian soils above, which gives the domaine a spread of exposures to work with. The fruit was whole-bunch pressed and fermented with wild yeasts, then aged for eighteen months in temperature-controlled tank with a small amount of neutral oak in the blend. The long élevage, rather than the wood, is what builds the texture here.
Drinking well now and worth holding five to eight years. Serve at 10-12°C with freshly shucked oysters, grilled whiting or a young goat's cheese.
