Birichino Yount Mill Sémillon 2021

Birichino Yount Mill Sémillon is a dry Semillon from sixty-year-old head-trained vines on the Napa Valley floor.

The Pelissa and Hoxsey family have farmed at Yountville since 1903 and planted these head-trained vines in 1962; Kendall Hoxsey works the ground now, and the Semillon is the only organic, dry-farmed parcel on the property. It lies on alluvial sandy loam at the cooler southern end of the valley, near the French Laundry, and yields very little. When Locke and Krause found enough drinkers willing to follow them into old-vine oddities, this was one of the first sites they chased. Picking happens on the cusp of ripeness, usually between 11 and 12 per cent, to hold the variety's pithy edge. Wild ferment in a mix of steel and old barrel.

Stone fruit and green fig with a creamy middle, then lemon cut and a phenolic nip at the end. Serve cold, at 10 degrees, in a glass with some room in it. Oysters, crab, chicken with tarragon, or a wedge of soft washed-rind cheese.
