Blank Canvas Anandale Farm Riesling is an off-dry white built around low alcohol and high acid.

The block lies at Blind River in the lower Awatere, a cool, dry, windy corner where this grape keeps its natural bite. Bunches are hand-picked and pressed whole, the free run settles for two days, and a cold tank ferment is stopped by chilling while sugar remains. It lands near 27 grams of residual sugar against 9.2 grams of acid.

Old-fashioned lemonade, key lime and honeysuckle lead, and the sweetness sits light because the acid cuts straight through. Drink it cold, about 8 degrees, with Thai salads, pork belly or a plate of blue cheese.
