Blank Canvas Holdaway Vineyard Sauvignon Blanc is a salty, single-block reading of Marlborough's best-known grape.

Dillons Point lies at the bottom of the Wairau, close enough to the sea that its deep alluvial silt over sand carries a tang of it. The Holdaway family farm 25-year-old massale vines there regeneratively. Picking happens at night to hold the aromatics, and the juice ferments cool in stainless steel before a short spell on light lees.

Blackcurrant, guava and passionfruit arrive first, then oyster shell and river stone across a dry, saline close. Pour it at 10 degrees alongside oysters, whitebait fritters or goat's cheese.
