Bleasdale Adelaide Hills Sauvignon Blanc is a crisp, aromatic white from high, cool vineyards in South Australia.

Although the family winery sits down on the Langhorne Creek flats, its Sauvignon Blanc comes from the Adelaide Hills, picked early to hold onto natural acidity. The grapes are crushed and chilled, given a short soak on skins, then gently pressed. Most of the juice ferments cool in tank for purity, while a portion goes to oak. The skin contact and barrel component add texture to the citrus, tropical, snow pea and nettle character, and the finish stays light and refreshing.

Well chilled on a warm afternoon is the obvious way to go. Goat's cheese tarts, prawn cocktails, asparagus and fresh herb salads all work well. Best enjoyed young and fresh.
