Description
Blind Corner Ripasso is a Cabernet Sauvignon and Sangiovese blend made with the re-passing technique of Valpolicella.
The name comes from the Veneto, where wine is passed back over the skins left from Amarone to pick up extra flavour and weight. Gould does the same thing at Wilyabrup, his certified organic and biodynamic home vineyard on the coastal flats four kilometres from the Indian Ocean. Two blocks of Cabernet Sauvignon make up 88 per cent of the blend and one block of Brunello clone Sangiovese the remaining 12. The fruit is crushed by foot and plunged by hand, and seven per cent of air-dried, raisined grapes, the same fruit that becomes his Bernard bottling, is re-passed through the ferment. Maturation is brief, in seasoned oak.
Deep and warm, with dark cherry, dried fig and cocoa, the tannins broad and softened by the dried-fruit component. Serve at 17 to 18 degrees. Braised beef, a mushroom risotto, or a hard Italian cheese at the end of the meal.
