Bodegas Pentecostés Albariño is drawn from the granite terraces of the Pazo de Barreiro, close enough to the Atlantic to taste of it.
Rías Baixas runs along the drowned river valleys of Galicia's south-west coast, where high rainfall, granite soils and the pergola training system have made Albariño Spain's leading white wine. Pentecostés work the terraces of the Pazo de Barreiro within sight of the ocean. Grapes are hand-harvested and held overnight at ten degrees, then fermented slowly at cellar temperature in stainless steel, with a small portion of the crop fermented in French oak. The wines are then raised undisturbed on lees for six months, which builds the texture that carries the variety's naturally high acidity. The result is taut and chiselled, with a dense core of fruit rather than the light, simple profile that dominates the category.
Good now and will build complexity over three to five years. Serve at 10–12°C with oysters, grilled prawns or salt-baked fish.
