Description
Pentecostés Varietales is a Rías Baixas white led by Albariño and filled out with the appellation's other traditional grapes, from a small estate that has brought vineyard back to the Miñor valley.
Rías Baixas runs along the Atlantic coast of Galicia, where rainfall is high, the bedrock is granite and the whites are bracing and saline. Bodegas Pentecostés was founded by Laura Montero Rodil and Dominique Roujou de Boubée, who rebuilt parcels in order to re-establish the only Rías Baixas vineyard in the Miñor valley, working from Pazo Barreiro north-east of Gondomar. The holding comes to under five hectares across three farms, on granite and steep terraces close to sea level, farmed by natural methods. Albariño is about three-quarters of the plantings, with Treixadura, Godello, Loureiro and Caíño accounting for the rest, and this bottling brings roughly a quarter of those companion varieties in alongside it. The fruit is hand-picked and held overnight at 10°C, then fermented slowly at cellar temperature in stainless steel, with a small part of the crop fermented in French oak. It rests undisturbed on lees for six months before bottling.
Drink it young and well chilled. Serve at 10-12°C with oysters, grilled fish or salt-and-pepper squid.
