Pollo a la Riojana (Rioja-Style Chicken with Peppers & Chorizo)
Ingredients:
- 4 chicken thighs, bone-in and skin-on
- 150g Spanish chorizo, sliced
- 2 tbsp extra virgin olive oil
- 1 onion, sliced
- 2 garlic cloves, lightly crushed
- 1 red capsicum, sliced
- 400g crushed tomatoes
- 100ml Rioja red wine
- 1 tsp sweet smoked paprika
- Salt and cracked black pepper
Instructions:
- Heat the olive oil in a large casserole and brown the chicken on all sides.
- Add the chorizo, onion, garlic and capsicum and cook until softened.
- Stir in the smoked paprika, followed by the crushed tomatoes and Rioja wine.
- Cover and simmer gently for 35–40 minutes until the chicken is tender.
- Remove the garlic cloves and season to taste before serving.
The smoky chorizo, sweet peppers and slow-cooked tomato beautifully complement Rioja Crianza's ripe cherry fruit, gentle oak and savoury spice, creating a classic regional pairing full of warmth and character.
