Bodegas Valdemar Conde Valdemar Tempranillo Blanco DOCa Rioja is a modern and distinctive white from Rioja, Spain’s most famous wine region and one traditionally known for red wines. Tempranillo Blanco is a rare and relatively new grape variety, first discovered in Rioja in the late twentieth century as a natural mutation of the classic red Tempranillo grape.

Bacalao a la Riojana (Rioja-Style Cod with Peppers & Tomato)
Ingredients:
- 4 cod fillets
- 3 tbsp olive oil
- 1 onion, finely sliced
- 2 garlic cloves, sliced
- 1 red capsicum, sliced
- 400g crushed tomatoes
- 100ml dry white wine
- 1 tsp sweet smoked paprika
- Salt and cracked black pepper
- Fresh parsley, chopped
Instructions:
- Heat the olive oil in a large pan and gently sauté the onion, garlic and capsicum until softened.
- Stir in the smoked paprika and cook briefly until fragrant.
- Add the crushed tomatoes and white wine and simmer gently for 10–15 minutes.
- Season the cod lightly and place the fillets into the sauce.
- Cover and cook gently for 8–10 minutes until the fish is just cooked through.
- Finish with fresh parsley and serve warm with crusty bread.
The sweet peppers, tomato and delicate paprika beautifully complement Tempranillo Blanco’s fresh citrus character and subtle texture, while the wine’s acidity keeps the dish vibrant and balanced in classic Rioja style.
