Bondar Clarendon Shiraz 2022

Bondar Clarendon Shiraz is a Shiraz from the biodynamically farmed Hickinbotham vineyard at Clarendon.

Hickinbotham was first planted in 1971 on rocky, ironstone-rich red soils, dry-grown and now farmed biodynamically, and its fruit has gone into Penfolds Grange, Eileen Hardy and Clarendon Hills over the years. Few South Australian sites carry that kind of record. Sitting well inland of the Rayner Vineyard at 250 metres, it gives a different animal of a Shiraz: finer, ferrous, red-fruited, tight and coiled, as Andre Bondar puts it. He kept his hands off for this first release, using around 30 per cent whole bunches and putting only a fifth of the wine into a one-year-old Stockinger demi-muid.

Red-fruited and iron-edged, with pepper, dried herb and a tight mineral finish. Not a McLaren Vale Shiraz in the usual mould. Decant and serve at 17 degrees. Roast lamb, duck, or beef with pepper sauce.
