Description
Bondar Fiano is a fresh, saline McLaren Vale white bottled young to hold its aromatics.
Everything about the 2025 was aimed at freshness: mid-February picking, gentle pressing to draw texture out of the skins, fermentation in tank with a tenth in old oak, then early blending and bottling. Andre Bondar's line on it is that the wine should be fine and fresh without being neutral or boring, which is the trap most Australian Fiano falls into. The fruit again comes from Ben Lacey's Branson Road block at Tatachilla, cooled by the sea and grown on grey-brown loam over limestone, and his north-facing Olivers Road site on red loam, which adds warmth and body.
Orchard blossom and dried herb on the nose, then a salty mineral line and a pithy, textural finish. Serve at 9 to 10 degrees. Oysters, grilled whiting, or a plate of marinated olives and cheese.
