Bondar Higher Springs Grenache 2022

Bondar Higher Springs Grenache is a Blewitt Springs Grenache from dry-grown vines on deep sand.

Compared with the Grenache off the estate's own Rayner Vineyard, the Trott fruit runs darker, with more power and a firmer frame, which is why Andre splits the parcel in two and ferments one half with 80 per cent whole bunches and the other with 10, building structure without losing the fruit. Sue Trott's Wilpena vineyard was planted in 1952, dry-grown in deep sand in the heart of Blewitt Springs, facing steeply east so it sheds the hottest part of the afternoon. Ten months in a seasoned Stockinger demi-muid followed, and the wine was bottled by hand.

Savoury and shining, with dark cherry, pepper and dried herb over a long, fine-grained finish. It will keep improving for years. Serve at 16 degrees after a decant. Slow-roast lamb, duck, or grilled eggplant with tahini and pomegranate.
